Through our “Ask Us” partnership with BEEF, you told us you wanted to know more about how your checkoff is being invested to build demand for your end product and increase your opportunities for profit – and we listened. As you know, your checkoff is invested in a variety of promotion, research and information programs, but you gave us some specific topics you wanted to hear more about, and we’re providing that for you here.
New Product Development
The Beef Checkoff Program serves as a catalyst to develop new beef cuts and products that respond to consumers’ demands – for things such as convenience, nutrition, tenderness, and overall eating experiences. The checkoff helps develop and test new products, then encourages and assists individual food companies to package, promote and take the products to market.
- Muscle Profiling – An extensive “Muscle Profiling” study funded by the beef checkoff and completed as the new millennium dawned resulted in development of numerous new steak cuts from the beef shoulder clod – the Flat Iron, Petite Tender and Ranch steaks – that previously were, for the most part, being ground into hamburger. Cattle-Fax estimates that these cuts now are selling at a rate of about 174 million pounds annually and adding about $1.2 billion a year to the value of U.S. beef. - More New Cuts – Capitalizing on its foundational Muscle Profiling research, the checkoff introduced five new cuts from the chuck roll during the last year – the Delmonico Steak, Denver Cut, America’s Beef Roast, Boneless Country-Style Beef Chuck Ribs and the Sierra Cut. - BIG Ideas – The checkoff’s Beef Innovations Group (BIG) continually works to generate and provide an array of new beef product ideas that are ready for food manufacturers to take into full development.
