Record High Beef Exports

Exports of U.S. beef set new records in 2011, reaching an all-time high in both volume and value. According to year-end statistics released by USDA and compiled by the U.S. Meat Export Federation -- a contractor to the Beef Checkoff Program -- exports of U.S. beef totaled 2.84 billion pounds valued at $5.42 billion in 2011. This broke the 2003 volume record of 1.274 million metric tons and easily surpassed the 2010 value record of $4.08 billion. Export volume was 21 percent larger than in 2010, with value up 33 percent.

Being BOLD With Beef!  

The checkoff-funded “Beef in an Optimal Lean Diet” (BOLD) study at Penn State University researched whether a DASH-style diet (gold standard heart-healthy diet), including frequent intakes of lean beef could be equally effective to the original DASH diet, demonstrating that it is unnecessary to restrict lean beef intake for heart health or to achieve a healthful dietary pattern. The associated study paper will be published in the January 2012 issue of the American Journal of Clinical Nutrition.

Responding To Consumers

In an effort to make beef a more convenient protein choice, the checkoff has is developing cook-from-frozen preparation instructions for the most common whole-muscle cuts, including sirloin and ribeye steaks. This is in response to research that indicates consumers take about 47 percent of steak cuts directly from the grocery store to their home freezers. Further, the market research indicates that consumers would be more willing to prepare beef weeknights if it could be more easily prepared from the freezer.
